Top Taste Jerk and Grill began its journey in the Channel Islands, where we catered for small-scale venues, open market days, and festivals. We also dedicated ourselves to extensive charity work, giving back to the community through our culinary passion.

After establishing ourselves in the islands, we made the move to Birmingham with a clear mission: to share the same excellent culinary experience and exceptional service with a new community. Our goal is simple - to cater for all our clients' food needs, from intimate one-to-one dining experiences to large-scale functions and events.

While we specialise in authentic Caribbean & Jamaican cuisine with our signature jerk dishes, we cater for ALL cuisines tailored to your exact specifications. My journey into the culinary world began in the warmth of my mother's kitchen, where she taught me that food is more than just sustenance—it's love, culture, and connection on a plate. Growing up in a household where Caribbean traditions were celebrated daily, I watched my mum transform simple ingredients into extraordinary dishes that told stories of our heritage. Her hands moved with purpose as she prepared traditional jerk seasonings, ground spices with precision, and created flavours that transported everyone around the table to the islands themselves. Those early lessons weren't just about recipes; they were about understanding the soul of Caribbean cooking—the balance of heat and spice, the respect for authentic techniques, and the importance of feeding people with genuine care.

My culinary education didn't stop in my mother's kitchen. I pursued professional training to refine the skills she'd instilled in me, studying food preparation, catering management, and the business of hospitality. I learned that being a great chef means understanding the craft, but being a great caterer means understanding people—their dreams, their celebrations, and what brings them together. This philosophy has guided every decision I've made throughout my career, from choosing the finest ingredients to ensuring every guest feels the warmth of authentic Caribbean hospitality.

I began my catering journey in the Channel Islands, where I built a reputation for quality and authenticity. Those early years were formative—catering for small venues, market festivals, and community events taught me resilience and attention to detail. Every event was an opportunity to showcase what authentic Caribbean cuisine could be, and every guest who tasted my food became an ambassador for Top Taste. During this period, I also developed a passion for giving back to the community through charity work. I believed then, as I do now, that success isn't just measured by business growth, but by the positive impact we make on those around us.

Beyond the Channel Islands, I took my passion further afield. I worked extensively in Malta, where I operated a restaurant that became known for blending Mediterranean and Caribbean influences. This experience was transformative. Working in different culinary environments taught me how to adapt, innovate, and respect diverse food traditions while maintaining the authenticity that defines my cooking. I learned that great cuisine crosses borders—it's about understanding flavour, technique, and the emotions we want to evoke in our diners. The experiences in Malta sharpened my skills in restaurant management, event catering, and the ability to deliver consistent excellence under pressure.

Alongside my professional ventures, I've maintained a guest house in Negril, Jamaica—a property that serves as both a business and a spiritual anchor to my roots. This establishment has allowed me to stay connected to Jamaica, to understand the pulse of tourism and hospitality in the Caribbean, and to draw inspiration directly from the source of my culinary traditions. Every time I return, I come back with new ideas, new connections, and renewed commitment to bringing authentic Caribbean experiences to wherever I am. The guest house isn't just bricks and mortar; it's a reflection of the values my mother taught me—hospitality, authenticity, and the belief that every guest deserves to feel at home.

My move to Birmingham represents the next chapter in this journey. After years of building my reputation across different regions and countries, I felt called to bring Top Taste to a city that's vibrant, diverse, and hungry for authentic, quality catering. Birmingham has given me the opportunity to establish Top Taste Jerk and Grill as a full-service catering business that respects tradition while embracing the city's multicultural spirit. What started as my mother's recipes has evolved into a professional catering operation, but the heart remains the same—feeding people with authenticity, excellence, and genuine care.
